Savory Parmeson Butternut Squash Soup is one of my favorite soups, and not just in the winter. Its also my oldest daughters very favorite.


Ingredients:

- 3 lbs butternut squash, peeled, seeded, and diced into 1-inch pieces

- 1 tablespoon minced garlic

- 1 large white onion, chopped

- 1 teaspoon sea salt

- 4 cups broth (vegetable or chicken)

- 1/2 cup Parmesan cheese

- 1/2 cup ricotta cheese

- 1 tablespoon onion powder

- 1 tablespoon garlic powder

- 1-2 cups milk

- Olive oil
